  • 1 1⁄3 Cups – STODKIE Gluten Free Flour
  • 1 Tablespoon – Sugar
  • 1⁄2 Teaspoon – Salt
  • 1 Teaspoon – Cinnamon or 1 Teaspoon –
  • Apple Pie Spice
  • 1 Egg
  • 1 Cup – Favorite Type Of Milk1 Teaspoon – Vanilla
  • 1 Tablespoon – Coconut Oil
  • 2 Medium Apples, peeled and sliced in
  • Confectioners’ Sugar – save for later

Optional Ingredients

  • ½ Teaspoon – Baking Soda (if you like pancakes thicker, if not omit)


  • Food Processor



In a bowl, combine flour, sugar, salt and spice and mix with a Wisk.


In another bowl, lightly beat egg; add milk and coconut oil. Add to dry
ingredients and stir until smooth


After peeling apples, put them into a food processor or shred them manually.
Fold apples into the batter. If there is too much juice, drain a small amount before
putting it into the batter – otherwise it can get too watery.


Heat a griddle with 2-3 tablespoons of coconut oil – it should lightly cover the
bottom of the pan. Heat until a splash of water makes the oil bubble. When the griddle is
hot, add the batter.


Use a ½ cup of batter, or an ice cream scoop full of batter, onto the hot griddle
and spread to form 5-inch circles.


Turn when bubbles form and edges are slightly brown – about 3-4 minutes. Flip
and cook until the other side is golden brown and the apples are tender – about 2-3


Remove the pancakes from the griddle and place on paper towel, gently pat the
excess oil off the pancakes.


Sprinkle with confectioner’s sugar and serve for breakfast or desert. Enjoy!
