Day 1
 

1 Tablespoon starter packet (San Francisco)

1 Tablespoon Stodkie Gluten Free Flour
1.5 Tablespoon Warm Water (fluorine-free if possible)
 
 
1. Pour all three ingredients into a tall glass jar and mix. The consistency should look like batter if it doesn’t add a little more water. 
2. Place a coffee filter over the top of the jar to allow it to breathe, fasten with a rubber band.
3. Let it rest 12-24 hours.

Day 2
2 Tablespoon Stodkie Gluten Free Flour
1 Tablespoon Warm Water (fluoride-free if possible)
 
At this time there will be a few bubbles in your starter. Add 2 T Stodkie Gluten-Free Flour, stir until mixed well. We are looking for that batter consistency, so add up to 1 T water to achieve that. Put the coffee filter back on the top and let it rest for 12-24 hours.

Day 3
1/4 c water (fluoride-free if possible)
1/4 c Stodkie Gluten-Free Flour 
 
It should be fermenting and bubbling at this point. Add today’s flour and water, mix it all up together and make sure everything is mixed well, add a little more water to get the batter consistency. Let rest for another 12-24 hours.

Day 4 
1/2 c water (fluoride-free if possible)
1/2 c Stodkie Gluten-Free Flour
 
Add all today’s ingredients, mix it all up to make sure it’s all the same thickness all the way through. Cover with the coffee filter and let rest for another 12-24 hours.

Day 5
1/2 c Stodkie Gluten-Free Flour
1/2 c warm water (fluoride-free if possible)
 
Mix the starter up, and then pour off 1/2 cup of the mixture. (You can either discard this or use it to make pancakes.) Add today’s ingredients and mix well. Let rest for 3 days, you will see bubbles/fermentation at this point. 
 
Now you should be ready to use this starter for your Gluten-Free Sourdough Bread! Enjoy!
